Mixed Bean Salad

Ingredients

1/2 cup dried chickpeas

1/2 cup dried red kidney beans

1/2 cup dried butter beans

1/2 cup dried black-eyed beans

Pinch of salt to taste

Special dressing (GF DF, V):

1/4 cup cold-pressed virgin olive oil

1 lemon freshly squeezed

1 garlic clove minced

3 spring onions finely chopped

1 teaspoon dry mustard powder

Fresh parsley finely chopped

Description

(GF, DF, NF, YF, V)

This salad is nice with brown rice or grilled fish. One of our other dressings may be used if preferred.

Directions

Soak all the beans for 12 hours, then wash and drain.

Fill a saucepan with cold fresh water, add the beans and bring very slowly to a boil (takes about 30 minutes).

Simmer over a low heat for 40 minutes until tender.

Rinse, drain and refrigerate while preparing the special dressing.

Special dressing:

Mix the first 5 ingredients well, then pour over cold beans and toss.

Sprinkle with parsley and LSA before serving.
